
Memories of endless summers, of laughter shared between cousins and siblings, of bright mornings in the countryside, where the olive trees accompanied us on our adventures. There, in that countryside, but also in an olive mill ("molina") in Fuente Obejuna, we discovered, while playing, the aroma of freshly pressed olive oil. We were fascinated by the mats ("capachos") used for cold-pressing the olives, and we enjoyed a little bit of that “olive juice,” as we called it, with breakfast and afternoon snacks. Who doesn’t remember bread with olive oil? And for those with a sweet tooth, a sprinkle of sugar over the oil and bread was a must.
During those summers, time was measured by laughter and sunsets. We didn’t know then that those days would leave such a deep mark on us and that one day, many years later, they would lead us on a new adventure: to create something that captures the essence of those moments. This is how "Cuarentaiseis Cromosomas" was born.
Why that name? Because, just like humans, olive trees have forty-six chromosomes. It’s a natural, almost poetic connection that invites us to care for and respect this ancient tree as if it were a brother or cousin. It’s no wonder the ancient Greeks considered it the tree of life, an inexhaustible source of health and well-being. And although we could talk at length about the benefits of olive oil, we’d rather let the aroma and flavor of our oil speak for themselves.
Our extra virgin olive oil is an early harvest, made from the Picual variety, selected with the care and love that this project deserves. "Cuarentaiseis Cromosomas" is not just a product; it’s the result of an emotional journey, a way to honor our childhood, our family, and our roots.
